The Valdiguié from Ricetti is always a pretty, low alcohol and bright wine. In 2023, the cool growing season meant that the fruit from the vineyard was some of the lightest and prettiest it has ever been, with particularly high acidity. It seemed very suited to sparkling, so a small quantity of the Valdiguié juice was drawn off from the main lot in order to make an experimental batch of Ricetti Valdiguié Pet-Nat.
The Valdiguié juice was drawn off after a few days on skins, in order to pull some of the color and texture from the skins. The sparkling portion of juice was left in a stainless steel drum to slowly ferment. Once the sugar reached around 20 g/L, the Valdiguié was bottled under crown cap to finish fermentation.
By February, fermentation had finished and the bottles were riddled and disgorged, retopped and resealed.
Indigenous yeast fermentation. No SO2, no other additions, unfined and unfiltered.
